Taste of Ukraine — Nicholasville, KY
A space of Ukraine in Nicholasville — a restaurant that brings Ukrainian food, culture, and spirit to Kentucky.
Today, as part of the Made by Ukrainians series, I want to share the story of Taste of Ukraine — a restaurant that truly shook Nicholasville this month and was long awaited by both Ukrainians and Americans.
The restaurant was opened by Ukrainian refugee Taras Soloshchuk, who relocated to the United States with his family after the start of the full-scale war in Ukraine. The journey was not easy, but through faith, hard work, and perseverance, this dream became a reality.
This is more than a place to eat. It is a Ukrainian space, created so guests can not only taste traditional dishes, but also feel Ukraine — its culture, history, symbols, and strength of spirit.
Every interior detail carries meaning, from wheat as a symbol of resilience to artwork representing Ukrainian cities. Taste of Ukraine breaks stereotypes: guests can come for a full meal, early breakfasts unique to the region, or simply enjoy coffee or tea with pastries in a cozy, welcoming atmosphere.
The menu features authentic Ukrainian cuisine, prepared from scratch using home-style recipes. Red borscht, stuffed cabbage rolls, and fresh pastries have already become favorites among guests.
Taste of Ukraine is the first Ukrainian restaurant in the state, powered by a team of about 20 people, more than half of whom are Ukrainian refugees — making it not just a business, but a place of support and community.





This is a story about a dream that became reality — and about Ukrainians who create, work, and introduce Ukraine to the world, even far from home.
